Position Overview

As Chief Steward at Lai Yin, you are the cornerstone of our food and beverage operations, ensuring every kitchen, restaurant, and banquet is equipped for success. From managing inventory to maintaining pristine standards, your leadership guarantees smooth operations that uphold Lai Yin’s reputation for excellence.

Key Responsibilities

• Oversee and manage the procurement, storage, and maintenance of all kitchen and food service equipment, including crockery, cutlery, glassware, cookware, and linens.

• Collaborate with the Food and Beverage Manager and Executive Chef to forecast and fulfil equipment needs for restaurants, banquets, and special events.

• Ensure all equipment is cleaned, polished, and stored to meet luxury standards.

• Develop and implement efficient systems for inventory control, minimizing loss, breakage, and overstocking.

• Lead and supervise the stewarding team, providing training to ensure adherence to hygiene, sanitation, and safety regulations.

• Coordinate dishwashing, cleaning, and waste management to maintain high standards of cleanliness in all food and beverage areas.

• Manage relationships with suppliers to ensure quality, cost-efficiency, and timely delivery of materials.

• Prepare budgets and reports for equipment needs, repairs, and replacements, ensuring cost-effective operations.

• Conduct regular inspections of equipment and facilities, addressing maintenance needs promptly.

Qualifications

• Proven experience in stewarding or food and beverage operations, preferably in luxury hospitality.

• Strong organisational and leadership skills to manage diverse responsibilities and a large team.

• Attention to detail and a commitment to maintaining impeccable standards.

• Proficiency in inventory management systems and operational planning.

• Excellent communication skills to liaise with suppliers, team members, and other departments.

• Knowledge of health, safety, and sanitation regulations, with the ability to enforce compliance.
