The Food and Beverage Trainee program offers an 18-month structured learning experience, providing hands-on exposure to key areas within the Food and Beverage department: kitchen, restaurant, and stewarding. Each phase lasts six months, equipping trainees with foundational skills and operational insights across multiple disciplines. Upon successful completion of the program, trainees may have the opportunity to transition into a management trainee role within the hotel. 

Program Structure

1. Kitchen (6 months):

- Participate in basic food preparation, including cutting, peeling, and organizing ingredients.

- Learn cooking techniques across various sections, such as the hot kitchen, cold kitchen, and patisserie. - Support menu preparation, plating, and maintaining kitchen hygiene standards. 

- Gain exposure to kitchen operations, inventory management, and teamwork in a high-pressure environment. 

2. Restaurant (6 months):

- Develop customer service skills by assisting with table setup, order taking, and food service.

- Learn the principles of wine and beverage service, including pairings and recommendations. - Understand the flow of operations, from guest interaction to maintaining restaurant ambiance. - Work closely with the service team to ensure a seamless dining experience for guests. 

3. Stewarding (6 months):

- Support back-of-house operations, ensuring cleanliness and organization of all equipment.

- Learn dishwashing protocols and proper handling of kitchen tools and materials.

- Assist with inventory tracking, including maintaining stock of cleaning supplies and equipment. 

- Understand the essential role stewarding plays in the overall efficiency of the Food and 

Beverage department

- Maintain a professional attitude and a willingness to learn across different areas.

- Follow hotel policies and uphold high standards of hygiene and safety in all operations.

Opportunities Upon Completion

- Graduates who successfully complete the program may be invited to join the hotel's management trainee program, which offers further development opportunities and prepares candidates for leadership roles within the organization.
